Big Chewy Chocolate Chip Cookies

I've been hiding away behind my laptop, madly trying to finish my research proposal. There are only so many articles a girl can read on hamstring injuries and MR imaging. This cumulated with the longing of freshly made cookies didn't help my cause.

So these soft chewy chocolate chip cookies came warm out of the oven about 30 minutes later. It took a lot to resist the temptation to eat one hot from the tray, but it was well worth it to bite into a soft chewy cookie with those warm chocolate chips!

Ingredients

  • 2 cups plain flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 tablespoon vanilla extract
  • 2 eggs
  • 1.5 cups semisweet chocolate chips


Directions


  1. Preheat the oven to 160 degrees C. Grease cookie tray or line with baking paper.
  2. Sift together the flour, baking soda and salt; set aside.
  3. In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla and eggs until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon. Drop cookie dough 2 tablespoons at a time onto the prepared cookie trays. 
  4. Bake for 15 minutes in the preheated oven, or until the edges are lightly toasted. Cool on baking try for a few minutes before transferring to wire racks to cool completely.

You can always add more chocolate chips if you're a chocoholic :P Next time I may try the white chocolate chip and macadamia cookie... Oh how my tummy rumbles thinking of it!
